Healthy Blue Pancakes
Servings: 4 or more depending on the size you like.
Time: 10 minutes or less
Ingredients:
- 2 scoops of Healthy Blue
- 1 teaspoon of vanilla extract
- 2 tablespoons (or more) of almond milk or any milk of your liking.
- 2 ripe bananas
- 1 tablespoon of chia seeds
- 2 eggs
- A dash of cinnamon and nutmeg (if you like)
- Ghee, butter, or oil (for cooking)
For this recipe all you need is a bowl and a fork. Smash the two bananas, mix with the eggs and vanilla. Add the chia seeds, cinnamon and Healthy Blue, mix. If the consistency is too thick add a little bit of the milk and mix until you get a smooth and whip-able consistency. Heat a pan on medium heat, add a dollop of ghee/butter/oil and scoop ¼ of a cup on the pancake mix. Cook until you see tiny bubbles form on the sides of the pancake, flip and cook for another minute. Done!
