Healthy Blue Pancakes

Healthy Blue Pancakes

Servings: 4 or more depending on the size you like.

Time: 10 minutes or less

Ingredients:

  • 2 scoops of Healthy Blue
  • 1 teaspoon of vanilla extract
  • 2 tablespoons (or more) of almond milk or any milk of your liking.
  • 2 ripe bananas
  • 1 tablespoon of chia seeds
  • 2 eggs
  • A dash of cinnamon and nutmeg (if you like)
  • Ghee, butter, or oil (for cooking)

For this recipe all you need is a bowl and a fork. Smash the two bananas, mix with the eggs and vanilla. Add the chia seeds, cinnamon and Healthy Blue, mix. If the consistency is too thick add a little bit of the milk and mix until you get a smooth and whip-able consistency. Heat a pan on medium heat, add a dollop of ghee/butter/oil and scoop ¼ of a cup on the pancake mix. Cook until you see tiny bubbles form on the sides of the pancake, flip and cook for another minute. Done! 

Enjoy with Blue Zones Nicoya Honey Spreads and some berries, yum!
